Tropic & Tonic
For many this is an unusual combination. However, the drink is refreshing and layered, combining bright citrus with light sweetness and aromatic spice. You can use your favourite brand of rum of course, and using falernum ads a herby, deeper sweetness which works better that regular sugar syrup. The combination of rum, lime and sweetness is a tried and tested classic, but then elevate the flavours with a couple of dashes of Peychaud’s cocktail bitters and the drink takes on a whole new dimension. Lengthen the drink with bubbly Franklin & Sons Light Tonic Water and it finishes with a subtle, bittersweet undertone and the slightest of pink hue’s.

Ingredients

2 ounces light rum

1/4 ounces freshly squeezed lime juice

1/2 ounce Falernum syrup

1 dash Peychaud’s Bitters

Add all ingredients except tonic water into a cocktail shaker with ice.

Shake hard and well for approx. 15 seconds and strain into a chilled Copa/Large wine glass over fresh cubed ice.

Top up with Franklin & Sons Light Tonic Water.

Stir lightly and garnish with a lime wedge. Serve and enjoy.
